Cabo Taco
There is a joint in Glendora,CA called "Cabo Taco". I love them. In Spanish "cabo" means "end" or "cape" (like a pennisular coastal thing...not Superman)SO SEAFOOD! Their grilled shrimp and fish taco are delightful. BIG YUM. Of course I want to duplicate it back here in Michigan so some swaps have occurred. I am esp excited about the curtido (pickled cabbage) and salsa de pina I have made this morning. The salsa in particular is gonna be amazing.
I started by fire roasting one big poblano, one yellow, one red (also hatch but those went in the curtido) sweet pepper. After charring and letting them cool, ofcourse, stem and deseed. Slice into strips. Then I sliced RIPE pineapple into taco sized bites(THAT is challenge here...lemme tell ya) Lil garlic and lime, some olive oil to help marinade and into the fridge. Closer to dinner I will season cornstarch and rice flour (50/50) with powdered chipotle and garlic, toss pollock cubes in the dredge. Quick fry in a nice oil. Corn tortillas and CHEF'S KISS!
